Labor Day is September 7th, by most considered to be the official end of summer. It has and continues to be, a HOT one. The Scout Guide Palm Beach asked us to name 5 essentials and the following are tips to beat the heat! Keep cool & enjoy the final days of Summer 2015.

3. Coconut Fruit Pops
What health benefit will be discovered next about this amazing fruit? Cook with it, swish it in your mouth in the morning to get rid of toxins, slather it all over your body or put the lime in the coconut and freeze it for the ultimate cool treat. Here is a super easy recipe:
Coconut-Lime Ice Pops
- ACTIVE: 10 MIN
- TOTAL TIME: 2 HR 10 MIN
- SERVINGS: Makes 10 to 12 pops
- Two 14-ounce cans unsweetened coconut milk
- 1/2 cup sugar
- 1/2 cup fresh lime juice
- Finely grated zest of 1 lime
In a blender, puree the coconut milk with the sugar, lime juice and zest. Pour through a fine strainer into a large measuring cup and then pour into 10 to 12 ice-pop molds. Freeze until set, at least 2 hours or up to 1 week.
